It undergoes a natural anaerobic process, which enhances its flavors of white grapes, black currant, rose, and Honey. Guji's coffee is known for its unique qualities, which are distinct from the neighboring Yirgacheffe and Sidamo regions. The Guji region, officially recognized in 2002, benefits from unique local varieties and microclimates, including high altitudes, abundant rainfall, and rich, fertile volcanic soil, contributing to the coffee's distinctive character and high quality, consistently ranking among the best in Ethiopia.
